Sounds like you're having a great time so far! I like your photos, especially the second to last one - it looks like it was taken from above rather than from the street.
The thing you said about pigeons going up to people is exactly the same in Venice - people actually hold out food and they get SWARMED by pigeons, who will sit on your arms/shoulders and eat while people take photos of you. I wonder if people here and there are aware of the diseases...
I hate the idea of the tipping/tax thing. That's one thing I think Australia definitely has right over the rest of the world - if the price tag says $12, it should be $12. But thats a rant for another time :)
